- Wheat flour: 500g
- Salt: 5g
- Sugar: 40g
- Ammonia powder: 5g
- Baking powder: 5g
- Fish sauce: 100ml
- Minced garlic: 1 tbsp
- Minced chili: 1 tbsp
- Kohlrabi or Papaya: 1/2
- Carrots: 1/2
- Vinegar: 1 bowl
Step 1: Add 500g flour, 5g salt, 10g sugar to the bowl and mix. Add 50ml water to the bowl of baking powder and the bowl of ammonia powder and stir. Then, pour these two bowls into flour bowl. Add 100ml of water and mix.
Step 2: Take the dough and knead carefully in 25-30 minutes. Then, put the dough in a bowl, use plastic food wrap to cover and rest for 4 hours.
Step 3: Take the dough, sprinkle wheat flour and roll the dough to make it thin and flat. Divided into bars. Then, use a long, small wood stick and lightly press in the center of the dough bar, overturn the bar and put down, put another bar on it and continue to use wood stick press in the center. Do the same with the rest.
Step 4: Use hands slightly stretch the dough bar then fry in a pan.
Step 5: Pick up the crullers when they are golden. Add 200ml water to a bowl, add 100ml fish sauce, 30g sugar, 1 tbsp minced garlic, 1 tbsp minced chili, 1 tbsp vinegar, sliced carrot and kohlrabi or papaya, stir.
Step 6: Now enjoy the hot fried crullers with the dipping fish sauce!
