Coconut Agar Flan

- Pandan leaf: 5

- Sugar: 170g

- Agar agar powder: 10g

- Egg: 7

- Vanilla: 1 tbsp

- Whipping cream: 150ml

- Fresh milk: 400ml

- Pineapple: 2


Step 1: Wash pandan leaves, cut and then blend in blender with 1l of water.

Step 2: Mix 100g sugar with 10g agar agar powder.

Step 3: Pour pandan leaf juice into a pot through a towel to remove the residue then boil. When the water boils, add the mixture in step 2 to the pot and stir. When the water boils again, turn off the stove.

Step 4: Pour the mixture into the tray, freeze for 1 - 2 hours. Then, take out and cut into pieces.

Step 5: Add 4 eggs, 3 egg yolks, 70g sugar, 1 tbsp vanilla, 150ml whipping cream, 400ml fresh milk into a bowl and stir.

Step 6: Pour the mixture in step 5 through the sieve into the bowl, add pandan leaf jelly to the bowl and stir.

Step 7: Put the mixture into the coconut, place on a tray, add hot water and bake for 40 - 45 minutes. Then refrigerate for 1 - 2 hours.

Step 8: Cut coconut flan into pieces and enjoy!
